A Balti meal laid on a white cloth: plates of mamtu, a bowl of tras balay, flatbread and a brass dish of apricot oil

Nothing waits

Dumplings are folded after your call. Noodles are cut that afternoon. Broth takes the time broth takes.

A house, not a room

You eat at a family table on Marafie Colony Road. The person who cooked your food will likely sit down with you.

Grown at 2,230 m

Apricot oil, walnuts, barley, buckwheat, and herbs gathered above the villages. Balti food is what this altitude will give.

What people come for

Mild, nutty and built on wheat and walnut. Not the curry you are expecting.

2 rsapkhoor, 6 mamtu, a bowl of tras balay and a plate of prapu, with two glasses of pharring chhoo, green and red chilli sauce and apricot oil.

Mamtu

Mamtu

Rs 2,000

10 traditional dumplings with chicken and local herb fillings.

Folded by hand and steamed in a tiered pot. The dish guests mention more than any other, and the reason many of them come.

Balti Dum Pulao

Balti Dum Pulao

Rs 2,500

Plate of chicken and vegetable pulao cooked in a pressure cooker, served with raita.

Tras Balay

Tras Balay

Rs 2,800 / 3,500

Bowl of handmade noodles in soup with local herbs, with chicken or beef.

The noodles are rolled and cut by hand the same morning. The green comes from herbs that grow above the village, not from a jar.

The valley cooks like this because of where it is

Skardu sits in a cold desert at the meeting of the Indus and the Shigar, walled in on every side by the Karakoram. Little grows here that is not hardy: barley, buckwheat, walnut, apricot. Balti cooking is the record of that.

It is closer to Tibet than to Lahore, and it is not spicy.

What Balti food is
Golden poplars and stone-walled fields on the valley floor below the Karakoram
Halved apricots drying in the sun on a flat mud roof
The dining room at Balti Cuisine: floor seating, a red carpet and a long cloth laid with plates

Kaneez Fatima

The first female run home kitchen in Baltistan

Every home in Baltistan cooks this food. In 2022 Kaneez Fatima opened hers, founding Balti Cuisine as the first female run home-based restaurant in the region.

Guests keep describing it the same way, as a warm invitation into a local home. Most of them leave saying it felt like eating at an old friend’s house.

Guests tend to remember two things: the mamtu, and the woman who cooked it.

Absolutely destroyed this plate of pulao and the Moscot chicken. Would recommend visiting just for the love of the game and the owner herself. She's such a boss and an absolute delight to talk to. I could taste a mother's love in the food.

A true taste of Baltistan. Every dish felt deeply rooted in local tradition, made with incredibly fresh ingredients and packed with authentic flavour. The chicken pulao, chicken moscut, and comforting barley noodle soup were all excellent.

Amazing experience at the balti cuisine. The food was delicious and the only place where you will find authentic balti taste! The host was very welcoming. Our children really enjoyed the company as well!
